Are you on a meat detox or just wanting to take in more vegetables? With some great feedback off our last dish why not give chilli paneer a go? This is another great alternative to a meat based meal with it providing some texture and hearty vegetables.

Paneer is fresh cheese originating in the Indian subcontinent. The way paneer is traditionally cooked is often without a lot of flavouring or spices, which is one of the reasons why meat eaters don’t take immediately to paneer. We promise though the spices and flavors here will want you to cook this 5 step recipe on a regular basis!

Ingredients

Cornflour, 3 tbsp
Plain flour, 3 tbsp
Salt, 1 tsp
Black pepper, 1 tsp
Chilli powder, ½ tsp
Water, ¼ cup
Paneer, 3/4 packet cut into small cubes
Garlic, 2 gloves crushed
Capsicum, ½, chopped in squares
Capsicum, ½, chopped in squares
1 onion, chopped in squares
1 spring onion, finely chopped

Chilli Paneer Recipe

1. In a mixing bowl, add the cornflour, plain flour, salt, pepper, chilli powder, water and mix the ingredients together. You need to create a thick batter.

2. Coat the paneer in the batter and leave to rest for 5-10 minutes.

3. Heat a pan and on medium heat, shallow fry the paneer only for a couple of minutes on each side until the batter forms a crisp coating.
Do not overcook otherwise the paneer will become chewy. Once cooked, remove the paneer from the pan and let the oil drain on some kitchen paper.

4. Next, heat up a separate pan and on low-medium heat, add the garlic. Once browned, add the capsicum, onion and spring onion. Stir-fry for 2 minutes then add the soy sauce, hot sauce, ketchup, vinegar and sugar. Continue to mix the ingredients together for a few minutes but carefully so that they do not become soggy. The vegetables should remain crisp.

5.Add the paneer and mix together.

Tips: Chilli paneer is a popular Indo-Chinese dish so would pair well with either vegetable fried rice or plain noodles.
